I was DC but as always happens in Amsterdam even the most well laid plans will go out the window the weather didn't help us as it pished most of the time, I will definitely get a visit on my next trip. I love club orange for the bits but i really like finches as well, I have yet to taste nicer cheese and onion than tayto.

I can't speak to the business sense of the owners of those places you said closed early, but they must have had their reasons to close on "arguably" the busiest day/night of the year for selling alcohol. That's like Coffeeshops closing early during the HTCC.
Sometimes a "simple" question deserves a "complicated" answer...
